Lemon Pudding Cake

Do you love lemon as much as I do? Well, here’s a recipe for Lemon Pudding Cake you might like. I baked this cake some time ago…I’m finally posting it. I find that this cake is even better after a day or so. I noticed that the pudding separates even more from the cake with the passage of time. The cake is served warm, though, I prefer it cold.

The recipe I adapted was one from Tyler Florence. He decorated his Lemon Pudding Cake with fresh berries. I didn’t add berries, I added lemon zest. The berries do make for a pretty presentation.


Lemon Pudding Cake

4 servings

1 tablespoon unsalted butter, melted
Sugar for dusting

2 egg yolks (reserve whites)
2/3 cup reduced fat buttermilk
2 tablespoons lemon juice
1 tablespoon lemon zest

1/4 cup all-purpose flour
2/3 cup superfine sugar
1/4 teaspoon salt

2 Egg whites

1 tablespoon lemon zest
2 tablespoons confectioners’ sugar


  1. Preheat oven to 325 degrees Fahrenheit.
  2. PREP RAMEKINS: Butter and lightly sugar 4 ramekins (about 1-cup size). Set aside.
  3. MIX: In mixer, add egg yolks, buttermilk, lemon juice and lemon zest. Beat until well combined.
  4. SIFT AND ADD DRY INGREDIENTS: Reduce the speed to low. Sift in flour, sugar and salt. Mix until combined.
  5. EGG WHITES: Beat egg whites to stiff peaks.
  6. COMBINE TWO MIXTURES by gently folding them together with a spatula, a little at a time.
  7. RAMEKINS: Divide mixture evenly among ramekins.
  8. WATERBATH SETUP: Set ramekins in a roasting tray. Fill with hot water halfway up the sides of the ramekins.
  9. BAKE ramekins in a water bath for 45 minutes.
  10. DONENESS: Top springs back when gently pressed. Cakes have a golden brown color.
  11. COOL CAKES: Cool slightly.
  12. INVERT CAKES: Carefully invert onto a plate.
  13. SERVE: Dust with powdered sugar and lemon zest. (Add berries-optional).

I was in Teaneck NJ on 8/15/13 and came upon Butterflake Bake Shop. Not long ago, I read an article about ‘great bakeries’ and I remembered this bake shop being named.
So, I just had to stop by and try some pastries.

I had a Chocolate Rugelach, Apricot pastries and Cheese pastries. DELISH!! I Look forward to stopping back. The staff were very friendly. I didn’t have my DSLR canon camera with me, so, I had to use my smartphone to take photos.

After enjoying a hot cup of coffee and pastries from Butterflake, I headed over to the Teaneck Farmers Market. There, I worked as a Farm Market Seller for MacCakes. Angela Logan owns the company, Mortgage Apple Cakes, aka (MacCakes). Below are photos of a few of the vendors at the market.
